From extravagant enclaves to palm-fringed romantic hideaways, the U.S. Virgin Islands have the full spectrum of dining options. The tropical triumvirate of St. Thomas, St. John, and St. Croix are no longer the exclusive domain of local cooks, having become magnets for professional chefs intent on honing skills and creativity. Fresh fish and island fruits star here, and cuisine varies from inexpensive local stews to fancy French fare. Abundant supplies of wahoo, mahimahi, and conch are presented in any number of tasty ways from lightly broiled to deep fried. Resort hotel restaurants can be expensive, but reasonable fare is readily found at roadside Caribbean-style outposts frequented by locals. Throughout the U.S. Virgins, the popular snack is the johnnycake, made from deep-fried dough of cornmeal and white flour. St. Thomas has a wide variety of dining choices, from places with names like Craig and Sally's to Duffy's Love Shack, the latter with another shack on St. John. St Croix provides an international melange of tastes and styles, often with lobster dishes at the forefront. St John restaurants range from casual to haute, with many finer dining rooms claiming chefs trained at top schools. For the most part, smart casual dress is the rule, although some enclaves still expect patrons to sharpen up for the dining adventure.
